Fresh fruit and vegetables bring colour, flavour and variety to kitchens around the world. From everyday staples to varieties closely associated with particular regions, fresh produce is an incredibly broad part of the food trade.

The selection can include apples, pears, grapes and citrus fruits, tomatoes, peppers, onions and leafy vegetables, alongside tropical fruits, root vegetables and many other varieties. Availability naturally changes throughout the year, following harvests, growing seasons and supply.

Unlike products manufactured to the same specification year-round, fresh produce is shaped by nature. Size, colour, flavour and yield can vary from one harvest to the next.

More Variety Than We Often Realise

The fruit and vegetables we see every day represent only a fraction of what is grown around the world. Even familiar products such as tomatoes, grapes, apples, potatoes or citrus fruits exist in countless varieties, each with its own flavour, texture, appearance and characteristics.

Some varieties are grown on an enormous scale, while others remain closely connected to particular regions or culinary traditions. As food cultures increasingly meet, fresh produce also introduces people to fruits, vegetables and varieties they may never have encountered before.

For us, that variety is one of the most interesting parts of fresh produce: something completely ordinary in one part of the world can be a new ingredient, flavour or experience somewhere else.

From Harvest to Destination

Once fruit or vegetables are harvested, time matters. Sorting, grading, packaging, temperature control and transportation all play a role in preserving freshness and quality throughout the journey.

The requirements can differ considerably between products. Some produce travels well over longer distances, while more delicate varieties require tighter temperature control and faster handling. Understanding those differences is essential when moving fresh products from where they are grown to where they will ultimately be sold and consumed.
